Pick Sanitary Direct Steam Injection (Steam Heater / Cooker)
Sanitary direct steam injection water heating (DSI) systems are used for heating, in-line product cooking, or sterilising food products/slurry. Culinary stream is directly injected in products through hundreds of small orifices to get instant and precise temperature control. The mixing chamber cross-sectional flow volume is nearly the same as the piping, allowing for smooth flow through the system.

Why Pick Sanitary DSI?
- The Pick Sanitary DSI systems have a minimal footprint and the mixing chamber is small and easy to inspect or clean. With just three quick release clamps you can remove the device from the process line. The systems are available in a wide range of sizes capable of handling product capacity from 240 L/hr to +100,000 L/hr. Furthermore, it requires low capital investment – potentially half of other methods such as indirect heat exchangers. Ultra-High Temperature Pasteurisation:
Pick DSI Heaters are used for pasteurisation of milk or other dairy products to extend the shelf life of the product. Sanitary steam injection heaters are great replacements for the conventional methods of UHT using plate & frame heat exchangers or tubular heat exchangers. Pick’s heater design avoids flavour deterioration, over-cooking, or browning of the finished product.

Nitrogen Gas Injection:

Manufacturing – Nitrogen gas injection is used not only to extend the shelf life but also increase product volume and improve texture. Nitrogen gas directly injected to food must be precise to avoid off flavours.
Packaging – Gas injectors are used to help prevent rancidity in food products by displacing dissolved oxygen. Modified atmospheric packaging is used to keep food fresh but it needs to be perfectly balanced. Depending on product specification, Nitrogen or Oxygen gas can be injected.
